You've already got realistic drift settings off the bat without touching anything. AC is one of, if not the best sims for drifting. Try adding more caster, start with 5-10%, add more if needed. Also increase front camber. None of the cars in the game currently have a fast enough steering ratio for drifting like this (too many rotations lock to lock). Try also leaving the ingame force weaker and add like 5-7% to 'Overall Effects Strength'.
As I see it, the problem with lower end wheels like the Logitech G29 and G920 is that they don't have enough power to spin fast enough to drift properly. That is assuming we are trying to use the full 900° of rotation. The solution is to lower the steering angle to point where it can spin fast enough. The wheel is going to be more sensitive
